How to make milk kefir gluten free marble cake

I love a piece of cake from time to time. It is one of my comfort foods. I try to make it as healthy as possible, but sometimes a bit of sugar is unavoidable! Check this healthy recipe to make milk kefir gluten free marble cake.

I usually avoid wheat and sugar as much as possible, but I make a few exceptions. One of them is this delicious cake with unavoidable sugar. I also like to include fermented foods wherever I can. I use my leftover milk kefir to make this cake.

This is the cake I make time and time again. It is so easy to make. I took the regular marble cake recipe, and I started tweaking it by replacing the milk with the milk kefir, one to one. But soon I realized my milk kefir is quite thick as it is made with raw milk. So I increased the amount. The recipe below is what I usually use. Please note I am not a very precise person when it comes to measurements, let alone tweaked ones! So my measurements are give or take.


200 grams of butter
225 grams of flour (I use gluten-free, a mix of rice and millet flour)
100 grams of sugar
3 eggs
a pinch of salt
1 tsp of vanilla
half tsp bicarbonate of sodium
1 tsp baking powder
about 150 grams of milk kefir (if you are using milk, then it is about 80g)
20 grams of cocoa


Mix all dry ingredients together (except cocoa and 50 grams of milk kefir), then all the wet ones, and then incorporate them. After you have a nice mix, put half of the mixture in an oiled/buttered cake pan. Add the cocoa and the rest of the milk kefir to the second half of the mixture. Then add it onto the top of the white mixture, get a spoon, and mix it circles. Not all of it needs to be mixed, you would want to have some parts black, and others white.

Bake for about 50 minutes in a preheated oven at 180° C. Let it cool.

I also make the same cake with other flours whenever I don’t have the bought one. I might post another recipe with homemade flours in the future.
